During our warm Virginia summer season, I try to keep the dinners light—but let’s be honest, I’m still going to want dessert. So I rely on a simple truth: the freezer never lets me down. When it’s too hot to bake and too late to run to the store, I turn to my stash. Whether we’re dining al fresco on the terrace or having an impromptu evening in the dining room, I’ve always got something sweet (and wildly satisfying) ready to go.

These are the three desserts that show up again and again at Truitt House parties. They’re super fun, friend-pleasing, and always followed by someone asking, “Wait…can I have another one of those?”

It’s the easiest trick in the book: take something casual, serve it with ceremony. A silver tray turns a freezer find into a moment. It’s not fussy - it’s fun. And it always gets a smile.


 A Summer Freezer Strategy from The Truitt House

  1.    Mini Drumsticks or Dove Bars

I keep a box or two tucked away at all times. Serve them on a silver tray and you’ve got instant charm. It’s low effort, high delight. Nothing says “welcome to my home” like a childhood favorite dressed up like it’s headed to the opera.

    2.    Affogato

Ice cream, hot espresso, and a splash of liqueur—it never disappoints. It’s the kind of dessert that makes people think you really went all out… when in reality, you just reached for the espresso machine and the freezer. I like to keep tiny cordial glasses on hand for this. A little ceremony goes a long way.

    3.    Frozen Berries with Warm White Chocolate

Just like it sounds. Warm the white chocolate, pour over frozen berries, and serve with a sprig of mint on your prettiest plates. It’s refreshing, beautiful, and takes about four minutes to make. Five if you have to find the mint.

So there you have it: three desserts I always keep in my freezer—because you never know when dinner will stretch into dessert, or when an ordinary evening might call for something a little extra.
